  • 1 TSP Baking Powder
  • 3/4 Cup Unsweetened Almond Milk
  • 1/2 Cup Fat Free Greek Yogurt
  • 1 Large Egg
  • 1/2 TBSP Cream Cheese Frosting per Cupcake (for topping)

Directions

Preheat oven to 325.

Mix dry ingredients, gradually add milk, yogurt, and egg. Stir until smooth.

Line 12 muffin tins with cupcake liners.

Fill each liner about 3/4 full.

Bake 20-22 minutes.

Remove from muffin tin to cool.

Melt frosting (it’ll go further).

Macros are for entire recipe. For 1 cupcake, divide by 12.

  • 1 Large Egg
  • 1/2 Cup PCA
  • 1/4 TSP Baking Soda
  • Pinch of Salt
  • 1/2 TBSP Cream Cheese Frosting per Cookie (for topping)

Directions

Preheat oven to 325 and line cooke sheet with parchment paper.

In a large bowl, melt almond butter until creamy (usually 1 minute).

Add honey and egg into almond butter and combine.

Mix in protein powder, baking soda, and salt into the bowl and stir well until a sticky, wet dough forms.

Roll the dough into 1 TBSP sized balls. 

Press the cookie down quite flat, about 1/3 inch thick and bake for 12-13 minutes.

Let cool completely.

Melt frosting (it will go further) and frost cookies once cooled.

 Add sprinkles if desired.

In a small bowl, mix together dry ingredients and set aside.

Whisk together liquids until combine and add dry ingredients to liquid ingredients.

Mix well and quickly poor into prepared pans.

Bake until cooked throughout, about 18 minutes Melt frosting (it will go further that way) and frost each cake.
