Ingredients

  • 1/2 Cup Almond Butter
  • 2 TBSP Honey
  • 1 Large Egg
  • 1/2 Cup PPS
  • 1/4 TSP Baking Soda
  • Pinch of Salt
  • 1/2 TBSP Cream Cheese Frosting per Cookie (for topping)

Directions

Preheat oven to 325 and line cookie sheet with parchment paper.

In a large bowl, melt almond butter until creamy (usually 1 minute).

Add honey and egg into almond butter and combine. Mix in protein powder, baking soda, and salt into the bowl and stir well until a sticky, wet dough forms.

Roll the dough into 1 TBSP sized balls.

Press the cookie down quite flat, about 1/3 inch thick and bake for 12-13 minutes.

Let cool completely melt frosting (it will go further) and frost cookies once cooled.

Add sprinkles if desired.
